“10 Ingredients or Less” Recipes
Some of my favorite recipes are those that are simple and require only a few, high-quality ingredients, not counting standard ingredients such as salt, pepper, or oil. Here’s one from my “10 Ingredients or Less” collection. Enjoy!
Think about some of the best restaurant meals you’ve had. What is it that made the meal taste so wonderful? Many times, preparation is kept to a minimum to allow high-quality ingredients to really shine. Then, a complimentary flavor or seasoning is brought in to add complexity and pull the dish together.
One strategy chefs enlist to elevate simple fare is the addition of a sauce. This approach is a great one to tap into at home, as well. I do it regularly - roasting, sauteing, or grilling a protein or veggie, then finishing the dish with a dollop or drizzle of a flavorful concoction.
Voila! Instantly impressive and delicious!
Creating a sauce does not need to be complicated. Many times, it’s as simple as mixing a few ingredients together in a bowl. No real “cooking” involved, and minimal clean up.
This recipe for Cucumber-Dill “Tzatziki-Style Sauce is a good example. Light and refreshing, this sauce is full of flavor and texture to brighten up so many dishes. It’s a house favorite that comes together with relative ease. I particularly love pairing it with salmon, chicken, and vegetables. Serve it with grilled or roasted meats, fish, seafood, tofu, tempeh, whole grains, or vegetables - everything from entrees to appetizers! Add it to a cheese or charcuterie platter to spread on bread or crackers. Use it as a dip for veggies and stuffed grape leaves, as a spread for sandwiches or wraps, or as a topping for a grain bowl. I bet you can find even more uses for it - let me know your favorites!
Just as with so many sauces (and wine or people…), this one gets better with a little bit of age. Although it can be served immediately, I recommend refrigerating it for at least 30 minutes, or up to one day prior to serving to give the flavors time to fully develop.
Makes: about 1 cup
INGREDIENTS:
1 medium cucumber (or 1/2 large English cucumber), peeled, shredded (about 1 cup)
1 teaspoon minced garlic
1 green onion, white and green parts, thinly sliced
1 tablespoon fresh dill, finely chopped (or 1 teaspoon dried dill)
1/2 cup plain yogurt (regular, Greek, or plant-based)
1 tablespoon white balsamic, champagne, or rice vinegar
1 tablespoon lemon juice
1/4 teaspoon Kosher salt
1/8 teaspoon ground black pepper
DIRECTIONS:
1. Use paper towels to press out most of the moisture in the shredded cucumber.
2. Place all ingredients into a medium-sized mixing bowl. Stir gently to mix well. Taste, and adjust seasonings if necessary. The flavors will continue to develop over time.
3. Refrigerate until ready to serve - at least 30 minutes if possible, or up to one day. The sauce will thicken as it chills.
